Tortilla Pizzas

  • 4 small flour or corn Tortillas

  • Cooking Spray

  • 2 cups Shredded Light Mozzarella Cheese

  • 1 Cup of pizza Sauce

  • Italian Seasoning

  • 1/2 cup of John Soules Grilled Chicken (or any pre-cooked chicken)

Pizza, but make it a healthy snack! Turn this vegetarian/vegan by nixing the chicken and using vegan cheese!

Directions

  • Heat the oven to 350 degrees.

  • Grab cookie sheet, cover with aluminum foil and spray with cooking spray.

  • spread you tortillas out on the cookie sheet. Spread pizza sauce on each one with a spoon (you may have extra).

  • Sprinkle each tortilla with mozzarella cheese and the grilled chicken.

  • top each tortilla with Italian seasoning to your liking.

  • place the cookie sheet in the oven and bake until the cheese is melted. (apprx. 5-7 minutes).

  • Pull from the oven, let cool for 2-3 minutes and enjoy!

This was my first experience with any type of dietician or nutritional coach or anything of the sort. I was a little nervous going in because I have trouble sticking to diets and weight loss goals.
